Evaluasi Proses Produksi dan Pengemasan Modified Cassava Flour (Mocaf) di PT Rumah Mocaf Kabupaten Banjarnegara, Jawa Tengah

Tepung mocaf adalah tepung yang terbuat dari bahan baku singkong dimodifikasi dengan proses fermentasi. Kualitas suatu produk sangat penting bagi perusahaan agar produksi berjalan baik dan tidak memiliki hambatan. Tujuan penelitian ini untuk mengevaluasi pengemasan di PT Rumah Mocaf Kabupaten Banjarnegara Jawa Tengah. Metode dilakukan cara pengamatan langsung, wawancara karyawan, pengambilan data produk, identifikasi cacat produk. Analisis jumlah tertinggi menggunakan diagram pareto analisis penyebab fishbone. Berdasarkan hasil dapat diketahui bahwa terdapat pada kesalahan pengeringan, pengupasan kulit pencucian, fermentasi, penggilingan. Hasil menunjukkan jenis menyebabkan kerusakan adanya bau asam presentase 42% (cacat tertinggi), warna putih 25%, kadar air tinggi 21% bentuk agak kasar 13%. kemasan saat penyimpanan seperti terbentuk lubang kemasan, tanggal atau kadaluwarsa terlihat, tertutup rapat rusak di-sealer. Faktor berdasarkan fishbone yaitu baku, mesin, metode, pekerjaan lingkungan.
